Turkey goulash
A warming goulash using lean turkey meat and red pepper.

Ingredients
- 2 tbsp olive oil
- 1 large onion finely sliced and chopped
- 2 garlic cloves finely sliced and chopped
- 150 g mushrooms sliced
- 500 g turkey breast cubed
- 25 g plain flour
- 500 ml chicken stock
- 1 tbsp paprika
- 1 tin chopped tomatoes 400 g
- 1 tsp dried thyme
- 1 bay leaf
- 1 red pepper sliced and chopped
- salt and ground black pepper to season
Instructions
- Heat 1 tbsp of the olive oil in a pan and fry the onions until they are soft.
- Add the garlic and mushrooms and fry for another 5 minute.
- Remove the onion, garlic and mushrooms from the frying pan and place in a casserole dish.
- Add the remaining olive oil to the frying pan and batch fry the turkey to sear all over. Transfer to the casserole dish.
- When all the turkey has been fried, add the flour to the casserole dish and stir to evenly coat the turkey and onion.
- De glaze the frying pan with some of the stock and add to the casserole dish and stir in.
- Add the remaining ingredients (except the red pepper) and stir. Cover the casserole dish with kitchen foil to seal before putting the lid on top. Cook in a preheated fan oven at 180°C for 30 minutes.
- Remove the casserole dish from the oven and check if more water is needed, before adding the red pepper. Stir, season to taste and cook for a further 30 minutes.
- Serve with vegetables of your choice.
