Minty courgette ribbons
A delicious accompaiment.

Ingredients
- 1 tbsp olive oil
- 1 garlic clove finely chopped
- 1 courgette use a mandolin to slice into ribbons
- 2 tsps fresh mint leaves chopped
- ½ lemon juice and zest
- salt and ground black pepper to season
Instructions
- Heat the oil in a pan on a medium heat and fry the garlic for 1 minute.
- Add the courgette ribbons and fry for around 2 minutes, turning the ribbons over part way through cooking. They are usually served 'al dente' or you can cook for longer if preferred.
- Mix the mint, lemon zest and lemon juice in a bowl before pouring over the courgette ribbons in the pan. Stir to coat the ribbons evenly, season to taste and serve.

This is a nice side dish or as a ‘courgette pasta’ for those unable to eat pasta. I do cook courgette in this way but with the addition of the fresh mint makes a real difference. I will be cooking it with the fresh mint from now on. Amazing what a difference one little ingredient makes.
We agree, one little ingredient can be critical to the outcome of a dish and using fresh ingredients can change a dish completely. Luckily fresh mint is easy to grow in a pot on your windowsill or outdoors. Thank you for your feedback.
