Pitta bread

A traditional Greek or Middle Eastern flat bread.

Ingredients

  • 1 tsp sugar
  • 240 ml water at 27°C
  • 2 tsps dried yeast
  • 200 g wholemeal flour
  • 200 g strong white flour
  • 1 tsp salt
  • 1 tbsp olive oil

Instructions

  • Dissolve the sugar in the water, stir in the yeast and set aside for 10 minutes.
  • Mix the flour and salt together, stir in the yeast mixture and olive oil and mix to form a dough; use a metal spoon initially, before finishing off by hand.
  • Turn the dough out onto a floured surface and knead for 5 minutes.
  • Place the dough in a lightly oiled bowl, cover with cling film and leave in a warm place for 1 to 2 hours or until the dough has doubled in size.
  • Turn the dough out onto a floured surface, divide into 6 equal pieces and roll into balls.
  • Flatten each ball by hand and roll into an oval shape around 5mm thick.
  • Heat a baking tray in a preheated oven at 220°C. Remove the tray and dust with a little flour. Bake the pitta bread for around 5 to 7 minutes until they are puffed up and slightly golden in colour.

Notes

Freezing tip: Freeze the pitta bread in a polythene bag, separated by greaseproof paper.

    My first time cooking Pitta Bread and worked fine, not at all difficult. The texture was firmer than shop bought Pitta Bread but good to know that there are no additives!! Served with the excellent Chicken shawarma recipe.

    Made the pitta bread in a breadmaker up until the rolling out stage. This worked well and meant you could get on with something else, We enjoyed the pitta bread more bread like with a nicer taste than shop bought . Will certainly make them again.

    I froze some of this Pitta bread which was hard after thawing, just sprinkled some water and microwaved. It was brilliant. Now need to top up my freezer.
